Zesty Homemade Lemon Butter

I love it when my neighbours and yoga students give me fresh fruit from their trees and veggies from their gardens. This week, I received the most divine smelling fresh zesty lemons, I love lemons!!


When life gives you lemons, make lemon butter


So I decided to make a zesty lemon butter, its amazing to eat straight out of the jar... or spread on your croissants, this batch tastes just like a lemon tart.



Super easy to make, especially if you have a Thermomix. I like mine to be full of lemon tang!

I just picked up some small glass jars at the discount store, this batch makes around 300g, so that was 3 portions, one for you, one for me and one for my student who provided the lemons.


Ingredients

  • Juice of 2 large lemons (you could add a lime instead)

  • 110g Caster Sugar

  • 80g Butter

  • 2 Eggs

  • Zest of 1 Lemon

Method

  • Insert Butterfly into TM bowl and add the ingredients. Cook for 8 minutes at 80C on speed 3

  • Check to see if mixture coats the back of the spoon, if not cook for a future 2-3 minutes or until desired consistency is achieved.

  • Place in sterilised jars and chill until thickened.

  • Use as filling to make tarts or simple serve as accompaniment to other sweets


I've got so many lemons, I might have to also make Lemon Slice during the week - stay tuned.
