Cantaloupe + Cucumber SALAD
Dressing, whisk
White Wine Vinagar
Corriander

In a large bowl add
1/2 Cantaloupe
1 large Cucumber
Red Onion
Praprika
toss to coat in dressing. Let it sit uncovered for 15 minutes
To serve, add

Cantaloupe + prosciutto SKEWERS:
1 medium cantaloupe, rind + seeds removed
12 Basil Leaves
Mozzarella Balls
12 slices of Prosciutto
Balsamic glaze for drizzling
Directions:
Halve cantaloupe, then scoop out and discard seeds. Using a melon baller, scoop out 24 balls.
Assemble skewers: Layer cantaloupe, basil, mozzarella, prosciutto, and a second piece of cantaloupe until you have 12 skewers.
Drizzle skewers with balsamic glaze and serve immediately.
