Combine ingredients into a blender:

  • 1/2 watermelon cubed,

  • 250ml orange juice

  • 8 strawberries, halved,

  • a knub of fresh ginger

  • mint optional

  • 1 1/2 cups watermelon, seeded, cubed bite size pieces

  • 1/2 cup black pitted olives,

Dressing:

  • 2 tbsp olive oil,

  • 1 tbsp fresh lime

Garnish with:

  • 1/4 cup chopped mint,
